I promised something salty during this week of festivities, so today’s recipe is a delicious guacamole. I know there are like a gazillion recipes on Internet for making guacamole, but I followed the recipe found in Ferran Adrià’s book, “la comida de la familia” (Family’s food).
It is simple and it is good, why mess it around?
Ingredients
For 6 people
3 ripe avocados 3 tablespoons ripe tomato (1 medium tomato aprox.) 6 tablespoons fresh cilantro 6 tablespoons lemon juice 4 ½ tablespoons chopped onion (one small onion aprox.) SaltDirections
With the help of a knife, make a cross in the bottom of each tomato and scald in boiling water for 10 seconds. Cool in ice water, peel and cut into small cubes. Chop finely the cilantro leaves.
Cut avocados in half, put aside the seed and remove the flesh or pulp with a spoon. Place it in a bowl and mash with a fork or potato masher. Add tomato, onion and chopped cilantro. Stir in lemon juice, stir and add a pinch of salt.
Enjoy!
Just the way I like it! Looks great.
Thanks Greg!
I could eat that now 😉
Thanks MD! Have a nice day 🙂
I desperately need a good guacamole recipe. i am hopeless at making it.. thank you.. c
Hi C!
I hope this recipe works for you 🙂
I love this – but Dave does not like raw onions at all so I never make it 🙂
Hmm, that’s a shame. Maybe you can leave some without onion 😉
A grand guacamole recipe indeed.
🙂 Mandy
Thanks Mandy!
I’m glad you like it 🙂
Such a simple recipe to follow with such delicious results. Freshly made guacamole is the best!
Hi John!
Yes, it is 🙂
I agree, simple is best (although I do confess to often adding chili and cumin to mine). I adore guacamole and think I might have to get myself a copy of this book!
Hi Tanya!
Adding chili and cumin is a great idea, I’ll try it next time 🙂
This book is great, I highly recommend it, you’ll love it (and Big Man too 😉 )
Simple, bring it on! Simple lets the flavour shine through 🙂
Hi Claire!
Thanks for your comment, that’s the spirit!!
Have a nice day 🙂
Giovanna, this is very similar to the way I make guacamole – except I use lime juice – and leave out the cilantro – Ritchey doesn’t like it – one of the very few dislikes on his list!
Hi Phyllis!
Thanks for your comment. Have a very nice day 🙂
