I promised something salty during this week of festivities, so today’s recipe is a delicious guacamole. I know there are like a gazillion recipes on Internet for making guacamole, but I followed the recipe found in Ferran Adrià’s book, “la comida de la familia” (Family’s food).
It is simple and it is good, why mess it around?
For 6 people3 ripe avocados 3 tablespoons ripe tomato (1 medium tomato aprox.) 6 tablespoons fresh cilantro 6 tablespoons lemon juice 4 ½ tablespoons chopped onion (one small onion aprox.) Salt
With the help of a knife, make a cross in the bottom of each tomato and scald in boiling water for 10 seconds. Cool in ice water, peel and cut into small cubes. Chop finely the cilantro leaves.
Cut avocados in half, put aside the seed and remove the flesh or pulp with a spoon. Place it in a bowl and mash with a fork or potato masher. Add tomato, onion and chopped cilantro. Stir in lemon juice, stir and add a pinch of salt.
