Sea bass, prawns and avocado cebiche

Cebiche, ceviche… I’m never sure on how to spell it…anyhow, we can all agree that it is fresh and delicious. Perfect for the summertime.

I like this dish cause it is very quick to make, no more than 30 minutes actually, and that’s always a plus, don’t you think?

Ingredients

All ingredients must be diced

  • 1 sea bass clean and skinned
  • 1/2 red onion
  • The juice of 1 orange
  • The juice of 2 limes
  • 12 prawns
  • 1 avocado
  • Fresh coriander
  • Apple cider vinegar
  • A few drops of Tabasco
  • Salt and pepper

First of all, we want to place the onion in a bowl and cover with vinegar. Let it rest 5-10 minutes. That way we avoid the strong flavor of the onion while respecting its texture and adding a light flavor to the dish.

Meanwhile, mix the fish with prawns, add salt and pepper to taste, tabasco and citrus juices. Add drained onions and coriander. Mix well and let it rest in the fridge for about 10 minutes, then add your avocado and stir to coat it with the juices and avoid oxidation.

At this point it is ready to eat, although you may want to leave it in the fridge a while longer to develop more flavor.
