In Spain they have the barbarous custom (I have always thought so) that on your Name day or your birthday you are the one who pays and invites!!! (isn’t it ironic?) Well, these cookies were made for my husband to invite his colleagues on his (and mine) Name day, June 24th, St. John’s.

Looking for a fresh, quick, easy to carry and delicious recipe, I found a page called “chef in training” with one that turned up to be just perfect. I didn’t even have to use the blender!
These are fabulous, with such a fresh flavor and a wonderful texture.
Ingredients
Cookies
- 1 cup butter at room temperature
- 1½ cup sugar
- 1 egg
- 1 teaspoon of natural lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla
- ½ teaspoon salt
- ½ teaspoon baking powder
- 2¼ cups flour
Glaze - 1½ cups icing sugar
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon milk
- ¼ teaspoon vanilla
Directions
Start by preheating the oven to 180 ° C (350 ° F) Yes, I know … it’s hot, but come on! It will be worth it.
In a large bowl, cream sugar and butter, add egg and beat well. Now incorporate lemon juice, zest and vanilla. Mix and, finally, add salt, baking powder and flour. Mix until fully incorporated.
To form the cookies, make small balls (approximately 2.5 cm- 1 inch) and place them on a baking sheet covered with wax paper. Don’t forget to leave enough space between the cookies (about 5 cm-2 inches) cause they’ll grow while baking.
Bake 8 to 10 minutes or until they start to brown around the edges.
To make the glaze, simply mix all ingredients in a bowl until it turns smooth and creamy.
When the cookies come out of the oven, let them cool a little in the tray and then place them on a grid and drizzle with the glaze. Let them cool completely before eating.
I hope you bake this recipe one of these days. Every bite is an explosion of flavor.

Interesting about the birthday tradition, In the Philippines I am told that when it’s my birthday I would have to invite and treat my guests, It’s cool how some traditions compare to each other 🙂
