Wild berries muffins

I don’t feel like talking today. Parenting is such a difficult task…enjoy your little ones while you can ,because they will grow up and tear your world apart (or not, lucky you!).

Enjoy these muffins, I baked them for my office a few weeks back and people loved them.

  • 360 g/21/4 cups flour
  • 370 g 1 3/4 cups caster sugar
  • 1 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 375 g/ 1 1/2 cups buttermilk
  • 1 egg
  • 1/2 teaspoon pure vanilla extract
  • 70 g/ 5 tablespoons unsalted butter, melted
  • 250 g/ 1 pint wild berries


Preheat the oven to 170 ºC (325 ºF)

Put flour, sugar, salt, baking powder and baking soda in a freestanding (or handheld) electric mixer and beat on slow speed until combined.P1120246

Put the buttermilk, egg and vanilla extract into a bowl and mix to combine. Slowly pour into the flour mixture and beat until all the ingredients are incorporated.

Pour in the melted butter and beat until the butter has just been incorporated, then turn the mixer up to medium speed and beat until the dough is even and smooth.

Finally, gently fold in the berries with a wooden spoon until evenly dispersed.

Spoon the mixture into the paper cases until 2/3 full and bake for 20-25 minutes, or until golden brown and the muffin bounces back when touched. Skewer inserted in the centre should come out clean. Leave the muffins to cool in the pan before turning out onto a wire rack to cool completely.

    have you ever prepared ‘corviche,’ a popular food in the province of Manabi/Ecuador? i like corviche, but suspect there are even better ways to prepare it than the typical way… it’s time to experiment in the kitchen!

    1. Thanks Lisa! I wish I could send you a few of these! I haven’t heard of corchiche before, but it sounds delicious, will give it a try soon and maybe experiment a bit as you suggested 😉
