Marshmallow Cupcakes


In the summer, despite the heat, we insist on making BBQ whenever we have the chance. It must be some primal instinct that makes us want to gather around the fire with the tribe to chat and have some fun.

One of the customs associated with these fires, barbecues in the summer or winter bonfires are Marshmallow. Who has not enjoyed a delicious grilled marshmallows heated over the last embers?

But as fire and children are not a good combination; the other night I gave them marshmallows, but in cupcakes. This cheerful dessert or snack will take us all back to our childhood and as Frank would say, they will make us…

  • 120 g flour
  • 140 g caster sugar
  • 1 ½ teaspoons baking powder
  • Pinch of salt
  • 45 g unsalted butter, at room temperature
  • 120 ml whole milk
  • 1 egg
  • ¼ teaspoon vanilla extract
  • 12 medium pink marshmallows
  • 200 g mini marshmallows, to decorate
  • Edible glitter to decorate
  • Vanilla frosting


Preheat oven to 170 ° C (325 ° F). Line a cupcake pan with paper cases.

Put flour, sugar, baking powder, salt and butter in an electric mixer and beat at low speed until you have a sandy consistency. Gradually add half the milk and beat until it is well incorporated.

In another bowl, whisk the remaining milk with the egg and vanilla, and then pour this into the flour mixture. Continue beating until the mixture is smooth and creamy. Do not beat too much.

Fill the cupcakes cups with a spoon until 2/3 of its capacity and bake for 20-25 minutes. The cupcakes should be lightly browned and a toothpick inserted into the middle will come out clean.

Allow them cool slightly in the pan before turning them out onto a rack to cool completely.

Melt the pink marshmallows in a double boiler or the microwave. Hollow out a small section in the center of each cupcake and fill with a dollop of melted marshmallows. To make this operation easier, I suggest greasing a pastry bag and pour in the melted marshmallows, then fill the cupcakes. It is a sticky task, but is worth it.

You can find the recipe for the vanilla frosting in this post. To decorate the cupcakes, mix the vanilla frosting with the mini marshmallows. Spoon the frosting on top of the cupcakes and decorate with edible glitter.
