This recipe is from Ferran Adrià’s book, The Family Meal: Home Cooking with Ferran Adria. It is very tasty and easy to prepare. What makes it out of the ordinary is the touch of orange zest at the end.

You don’t need a BBQ to cook them, so if you are on the side of the world that is beginning winter, you’ll still be able to taste a bit of summer with these ribs.


  • For six people
  • 1.5 kg. pork ribs in one piece
  • The zest of ½ orange
  • 300 g. barbecue sauce
  • Salt
  • 300 ml water


Preheat the oven to 180 ºC (350 ºF).

Salt the pork ribs and place them on a baking tray, with the meaty side on top.

Pour the sauce all over the ribs.

Add water, diluting a bit the sauce.

Cover with tin foil and bake for 90 minutes. Every 20 minutes or so, bathe the ribs with the cooking juices.

Once completely cooked, cut the ribs and place them on a serving dish and pour some sauce all over them.

Finally, add the orange zest before serving. See? I told you it was easy…

  1. Just love ribs … while I worked as a chef .. we did a beef rib with orange glaze and it was one of the best ribs I ever had and I’m not a lover of beef. This is summer for me .. and I eat mostly spare ribs during the summer, but it’s dish we should enjoy the whole year. The photo of yours just jumps at me … perfect!
