This is a great recipe, one that I love to make when we have friends over for dinner. It is easy to make, and the colors and flavor are irresistible… nobody will ever believe that you had these beauties ready in 10 minutes or less.
- 2 ripe avocados, halved, pitted, and diced
- ½ onion, chopped
- 12 prawns, cooked
- 1 tbsp. Chives, chopped
- 1 tbsp. parsley, chopped
- 1 tbsp. of cilantro, chopped
- 4 tablespoons mayonnaise
- ½ tbsp. Dijon mustard
- Ground cumin to taste
- Maldon Sea Salt to taste
- Extra virgin olive oil
Toss the avocado in a bowl; add the onion, chives, parsley and cilantro.
Peel and chop the prawns, setting aside a few to decorate the plates. Incorporate to the bowl.
To serve, you may use the avocado halves as dishes or small glasses. Decorate with a whole prawn, a sprig of parsley or cilantro and a few flakes of salt.
