My Big Fat Greek Salad

Anybody remember the movie My Big Fat Greek Wedding, from 2002? Wow! 10 years already… Well, this Greek girl meets and falls in love with an Irish guy (I think) and she has to introduce him to the family. In one of the scenes they are having dinner and Toula (Nia Vardalos) tells her aunt that her boyfriend, Ian (John Corbett), doesn’t eat meat and this is what happens:

Aunt Voula: What do you mean he don’t eat no meat?

[the entire room stops, in shock]

Aunt Voula: Oh, that’s okay. I make lamb

That is a great movie if you like romantic comedies. Nia Vardalos is very funny and she shows that you don’t need to be a 34-24-34 in. kind of girl to be an actress. And John Corbett, well… he’s not that well-toned neither, but yet very attractive (ask Carrie Bradshaw).

Today I’m posting the salad, for Ian. Tomorrow the lamb, for auntie.

Ingredients

4 tomatoes cut into wedges

1 onion, cut into strips

½ cucumber, diced

225 g pitted black olives

225 g feta cheese, diced and drained

2 tablespoons fresh cilantro leaves

Parsley for garnish

Dressing

5 tablespoons extra virgin olive oil

2 tablespoons white wine vinegar

1 tablespoon lemon juice

½ teaspoon sugar

1 tablespoon chopped fresh cilantro

Salt and pepper

Directions

Prepare the dressing in a bowl, mixing oil, vinegar, lemon juice, sugar, cilantro, salt and pepper

Stir in the onion, tomatoes, cucumber, olives, cheese and cilantro. Give it a good shake and garnish with parsley.
