Poor man’s potatoes

Today’s recipe is good, is simple and is cheap. A typical dish from the south of Spain, don’t be misled by the name; they are simply delicious.

1 k fresh potatoes
½ onion, cut into thin rings
1 green pepper, cut into thin strips
3 garlic cloves
Olive oil


Make a mash in the mortar with the garlic, parsley and a splash of vinegar.
Peel the potatoes. Wash well and cut into slices not too thin. Place a skillet over medium heat with abundant oil and fry the potatoes slowly. At the last moment turn up the heat to brown slightly.
When the potatoes are half done, add onion and green pepper .
Just before removing from heat, drain most of the oil and add the garlic mash. Stir lightly and serve.

You can add a red pepper and 4 beaten eggs if you want.

  1. Those are perfect. mashed (my favourite) fried ( my other favourite) potatoes (why I have a fat bottom!) this is a perfect meal and then eggs! LOVE IT!

  2. And a little bit black pepper! I usually add this too…. This is really so delicious, and we love this so much. Another difference with ours, no garlic and green pepper… Always I learn something new and delicious to taste it… So, next time when I cook this meal, I will cook according to your recipe.
