As I still have some corn meal left, today I made a very easy “recipe”. These little baskets can be filled with anything, beef, chicken, fish, veggies, cheese, ham… the sky is the limit.
I chose minced meat and a quick “pisto manchego”, a combination of poached vegetables. These vegetables may vary slightly, but have as main ingredients green pepper and red pepper, tomato and zucchini. It’s similar to a ratatouille but with less ingredients.
The origins of this recipe go back to when the peasants of La Mancha (Castilla – La Mancha), cooked the products of their orchards in the open air.
I also made some Almojábanos, “S” shaped corn fritters, filled with mozzarella cheese, a favorite at home.

Ingredients2 cups pre-cooked corn meal, prepared according to package directions Mozzarella cheese cut in strips Oil for frying Olive oil 200 g. ground beef 125 g bacon, diced ½ onion diced 1 garlic clove 1 tomato diced 2 tbsp. tomato sauce concentrated Salt to taste
Pisto ManchegoOlive oil Salt A pinch of sugar 1 zucchini diced 1 small green pepper ½ red pepper 250 g tomato sauce ½ onion diced 2 ripe tomatoes
Make balls with the dough, then press with your thumb to make a hole and carefully form the baskets. To make the Almojábanos, turn the balls into rolls, flatten them, put some strips of mozzarella in the middle and close them. When you have all the baskets and rolls ready, fry them in hot oil until golden, drain on paper towels and reserve.
To make the beef filling, sauté the bacon, when is golden brown, add onion, garlic and a little bit later the tomato, cook until the veggies are soft. Now add the tomato sauce and 100
ml water, let it simmer until the sauce has reduce.
To make the pisto, heat oil in a saucepan, add peppers and onion and sauté. In another pan, heat oil and add the zucchini and tomato. Let both saucepans to simmer on low heat until the veggies are done. Then put everything together on the same pan and add the tomato sauce and sugar, let it simmer for a couple of minutes.
Fill the baskets with the beef and/or the pisto; put some pisto in a bowl and place the Almojábanos on the side to dip in.
