Today I bring you one of the chaos theory day recipes I made last Friday. These are great and quite easy to make if you don’t count the hour the potatoes need in the oven first (but you can bake them in the microwave). We have some for dinner on Friday and, after taking the pictures, ate the rest on Saturday for lunch and it was another hit. My family is soo happy I’m writing this blog!
Ingredients6 medium size baked potatoes 250 g. bacon 1 chopped leek 1 chopped onion 1 ½ cup grated Gouda cheese 2 tablespoons parmesan cheese 2 tablespoons chopped parsley
Put the bacon, leek and onion on a pan and sauté until brown, remove from heat and add half of the cheese, reserve.
When the potatoes are done, cut them in half and remove some from the inside to make room for the filling. Smash those bits of potato and mix with the filling, then put everything inside each half potato, spread the rest of the cheese on top and bake for 10 minutes at 350 ºF.
The cheese will be melted and delicious!!
